Well, it’s finally Autumn now! I’ve also finally finished writing up this recipe, which I know a few of you have eagerly been waiting for. So here it is! (quick & easy) Sweet Potato Bites

This recipe is so ridiculously easy, I almost didn’t even bother blogging it. But it makes an absolutely delicious meal, and we all need quick and easy meals some days, and let’s be honest, those are usually the days we especially need a delicious meal too. So here we are. It may clock in as one of the shortest, simplest recipes I ever blog, but don’t let that keep you from trying it out! Also, the recipe below serves two, but is easily adaptable for more or less. Vegan Southwest Veggie Bean Soup

This recipe… you guys, it’s to die for. Honestly. It’s one of our absolute favourites. We once made it three times in the same week, no joke! It’s absolutely delicious, and really adaptable too. You can use all sorts of toppings to mix things up, keeping the meal fresh and not boring. And you can make it as spicy (or not) as you like. You can also add quinoa or rice to bulk it up, making it more filling too. It will suit your purposes, whatever they are!

Healthy Vegan Oatmeal Cookies

Because no conventional sugar. Only sweetened by fruit and raw maple syrup or honey (obviously the latter choice won’t make it Vegan anymore, but either works well in the recipe, just FYI). It does use a bit of flour to help pull the whole recipe together, but you can use whatever kind of flour you like to easily make it gluten-free too.  Continue reading “Healthy Vegan Oatmeal Cookies”

Vegan Banana Bread

Banana Bread! Easy to make, and even easier to make Vegan. This recipe is super simple, and I try to make it a bit healthier too, even though it’s really more of a dessert. :) I like to make it with coconut oil and coconut sugar (rather than just generic brown sugar) for a healthier option. Don’t skip on the Cinnamon either, as that really makes the recipe. And Walnuts are my add-in of choice too, though any add-ins are totally optional.
