This recipe is so ridiculously easy, I almost didn’t even bother blogging it. But it makes an absolutely delicious meal, and we all need quick and easy meals some days, and let’s be honest, those are usually the days we especially need a delicious meal too. So here we are. Vegan Southwest Veggie Bean Soup

This recipe… you guys, it’s to die for. Honestly. It’s one of our absolute favourites. We once made it three times in the same week, no joke! It’s absolutely delicious, and really adaptable too. You can use all sorts of toppings to mix things up, keeping the meal fresh and not boring. And you can make it as spicy (or not) as you like. You can also add quinoa or rice to bulk it up, making it more filling too. It will suit your purposes, whatever they are!

Simple Crockpot Pasta & Veggies


This recipe is super quick, and works both in a Crockpot or in a large pot on the stove with a medium heat, if watched closely. I’ve made it both ways successfully. The flavour is amazing! But the best part is probably the quick cleanup, since it’s really just chopping everything up and throwing it in. It’s a filling, affordable meal to incorporate into your rotation of recipes. And you can easily make this Gluten-Free by using a rice noodle if desired. I’ve also made this recipe with both spaghetti/linguine style noodles and rotini/penne noodles as well. Really any type of pasta works! It’s quite an adaptable little recipe. Also, I do have to say I prefer this recipe with fresh herbs over dried. So I recommend finding them fresh if you can! Leek, Sweet Potato, & Lentil Soup

This is one of my all-time favourite soup recipes! Leeks are just a gorgeous plant, and so fun to cook with. The flavour they have once they cook down is absolutely delicious, but combined with the tomatoes and seasoned with plenty of thyme, himalayan salt, and pepper… It’s just phenomenal! Masoor Dal – Indian Red Lentils

This is such a great intro recipe for learning to cook Indian food, and is really accessible for those newer to just eating Indian food too! Everyone I’ve made this dish for has loved it, even if they’ve never had Indian food and think they won’t like it much. It’s a very easy recipe, and doesn’t take long to make. It’s also a very affordable meal, with simple ingredients. And it’s healthy too! Lentils are high in protein, fiber, and iron, and all those delicious Indian spices round out the dish to be packed with nutrients and health benefits unique to each herb and spice.
